There is no escaping the fact that olive oil is a delicate
product. In order to ensure its quality at the consumer's table therefore,
it must be handled properly at every stage of its journey from our groves
to the consumer's table.
As far as we have seen, our shipping philosophy is unique
in the marketplace. We only ship in March - to avoid any dramatic variations
in temperature. Both extremes of cold and heat will damage the soul of great
olive oil - its distinct and delicate aromas and flavors, and we ship only
in temperature controlled (55 degrees Celsius) containers.
Fundamentally, we are aware of how much olive oil sold
on delicatessen shelves is marred by poor shipping and storage. We put a
great deal of care and effort into producing these oils and wish to see
that rewarded by the consumer's enjoyment of the "correct" product.
This is the expression of Tuscany that is, in the world, uniquely able to
create Tuscan olive oil. It is different from others (and in our view better)
and the only way to demonstrate its difference is by "delicate"
handling from olive grove to consumer.
We avoid big distribution chains in order to make sure
the freshness of the oil remains the main focus, without having them shifted
around from one warehouse to the next.
We ship directly to the consumer in the United States
only via ground, making sure that excessive cold temperatures in cargo planes
don't destroy the oil's genuine resistance to oxidation it originally comes
with. |

farm's brand: every possible effort goes into this carefully crafted
oil. Very few bottles so far are produced per year. Hand plowed, hand
harvested, hand bottled and brought into the US by us, we take care
for the storage as well, to make sure that it remains the best there
is! This unfiltered oil smells of fennel and artichoke and possesses
a complex dense body with a medium spicy long finish that clearly
speaks of the fruit it is made of: Olives! Best over a filet of fish. Now fully certified organic!

| This neighbor
who first became a friend and now a partner in the same cause, is
as obsessive as we are. As a one-man band he has already quite a reputation
as a top winemaker of the Vernaccia grape from San Gimignano and now
seeks the equivalent as an oil-maker! Simone's typically spicy oil
is greenish with a perfect balance to the true fruit of healthy olives.
A superb Olive Oil for all fresh summer dishes where the enhancement
of fresh vegetable flavor is desired. Simone's farm is enrolled in

of two brothers and one sister took over their father's estate to
awaken its sleeping potential. Changes in a big estate, almost 1000
acres, are not made overnight, but the speed with which the Imbertis
have been able to sweep out the stuffiness of the old and to substitute
it with the best of the new, has been rewarded with a great Olive
Oil. Their golden liquid is processed in their own mill immediately
at the end of every day's harvest and is therefore the best expression
of this limestone-drenched soil. The aroma of cooked artichokes with
a dense body reminiscent of fresh walnuts, is enjoyed in this oil.
