For our products we carefully select organic olives and cultivate vegetables following natural and sustainable agricultural methods.

The olives are harvested and processed with care in order to obtain a high-quality extra virgin olive oil, while the vegetables from our garden are grown respecting the rhythm of the seasons.

Our philosophy is based on the close relationship between land, agriculture and hospitality. The “living territory” evolves and transforms continuously, and its quality depends on how carefully we preserve natural balance and biodiversity.

At Montecastelli we believe that agriculture should follow nature, working in harmony with the land and respecting its natural balance.

During the growing season the olive trees are carefully monitored and cultivated using traditional methods that preserve the quality of the soil and the surrounding environment.

Special attention is given to every stage of the olive cultivation process, from the care of the trees to the harvesting of the olives, ensuring a product of exceptional quality.

Once the olives are harvested, they are processed in the mill to obtain an extra virgin olive oil that preserves all its natural aromas and characteristics.

Primo OLIO

Primo Olio is the result of careful selection and processing of the estate’s olives, produced according to the highest standards of quality.

The oil is obtained from olives harvested at the right stage of ripeness and pressed shortly after harvesting in order to preserve its fragrance, freshness and nutritional properties.

This attention to every stage of production results in an oil with a balanced flavor, delicate aroma and authentic Tuscan character.
